Fresh, garlicky, deliciousness!
- Container of fresh basil (Trader Joe’s is very reasonable)
- 1 lemon, juiced
- 2 gloves of garlic
- handful of pine nuts (you could use almonds or walnuts too)
- salt, pepper, olive oil
- Put everything in food processor and process to desired consistency
This keeps in the fridge for a couple of days but the top of it will become a darker. I made pesto pizza (pizza crust, a little pizza sauce, pesto, and Daiya mozzarella) but, this is equally good on pasta. A little goes a long way, it is very garlicky.
