In my pre-vegan days creamy, cheesy risotto was one of my faves. I didn’t think vegan risotto would have the same creaminess, I was wrong. This was really good, the mushrooms add a great meatiness and the nutritional yeast adds cheesy creaminess.  Mike loved this vegan mushroom risotto.
