Vegan Cookies - Thumbprints

So simple with very few ingredients, one of my favorite cookies.  Easy to make Vegan Cookies – Thumbprints


Ingredients:

Directions:

  1. Mix EB, shortening, sugar and vanilla until combined.
  2. Add in flour and a few tablespoons of water until dough is formed. Chill for at least 30 minutes (or leave it in the fridge until you are ready for fresh made cookies).
  3. Roll into small balls and place on ungreased cookie sheet , make an indentation in cookie and fill with jam (a little goes a long way, you don’t want your jam to bubble over!)
  4. Bake at 325 degrees for 10-12 minutes.
  5. Watch closely so they don’t burn.

  1. So glad to had connected with you via twitter! This recipe looks great – so simple, but easy to vary and make yummy! I can imagine rolling it in sesame seeds or coconut for a little texture and added flavor, too :-) looking forward to trying them and your other offerings!
