Healthy, easy, loaded with protein, a quick and easy side. Good vegan bean salad.
- 1 can garbanzo beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- ½ c minced parsley
- 1 lemon, juiced
- 2 garlic cloves, minced
- 2 T red onion, minced
- 1 t cayenne pepper
- 2 T apple cider vinegar
- 1 T olive oil
- 1 T agave
- lots of freshly ground black pepper
- Combine ingredients, toss gently, taste, adjust seasoning if necessary.
- Serve immediately or chill.
