Vegan Pudding - Chia Coconut

I know this one looks funny and I kind of laughed when I saw the picture I took but this vegan pudding is really good!  Simple, raw, and loaded with chia seed goodness.  Google chia seed benefits to find out more about this small super-food.

Ingredients:

  • 2 T chia seed seed
  • 1 c coconut milk (the kind in a carton not in a can!)
  • ¼ c dried, unsweetened coconut
  • raw agave, to taste

 

Directions:

  1. Combine chia and milk in small bowl, whisk to combine and refrigerate overnight.
  2. Before serving, mix in coconut and agave.

  1. Thanks for such a wonderful recipe. Yes, it doesn’t look good at all but I’m after the nutrition. Can I ask why not the coconut milk in can?

    • Coconut milk in the can is richer and not watered down at all. Coconut milk in the boxed container is more of a milk alternative, with added vitamins. I had seen chia pudding recipes with soy or almond milk and I thought coconut milk would be a nice alternative. I am sure you can use the canned coconut milk, it will probably be even richer tasting!

  2. Do you think adding the agave and coconut with the coconut and chia seeds would make any difference in taste or consistency? I’m going to try this tonight for tomorrow’s breakfast. I usually soak my oatmeal with coconut milk (carton not can) and a teaspoon of chia seeds. Thanks for the great recipe and nice blog!

    • I think the pudding texture would be fine without the agave and coconut. I soak my daughter’oats overnight with chia, ground flax, cinnamon and almond milk, then add agave in the morning. If you try it, hope it works for you, let me know.
