This is an adaptation of that popular, non-vegan broccoli salad with mayonnaise and raisins.
Ingredients:
- 4 c chopped broccoli
- ½ c dried cranberries
- ½ c roasted and salted sunflower seeds
- Dressing:
- 1/3 c veganaise
- 2 T apple cider vinegar
- ½ t crushed red pepper
- Salt & pepper (to taste)
- 2 T dry mustard
- 1 ½ t agave
Directions:
- Combine salad ingredients in large bowl.
- In smaller bowl, combine dressing ingredients, whisk to combine, taste, and adjust seasoning if necessary.
- Pour dressing over salad, mix to combine.
- Serve immediately or store in refrigerator.
