Vegan Peach Cobbler – simple, perfect summer dessert!

Fresh, sweet, summer peach cobbler, yum!
Ingredients
  • ¼ c Earth Balance, cut into small dice
  • 5 medium peaches, peeled and sliced
  • ½ c all purpose flour
  • ½ c raw sugar
  • 1 t baking powder
  • ½ c vanilla almond milk
  • 1 t vanilla
  • 1 T + 2 t cinnamon
  • ⅛ c + 2 T brown sugar

Instructions
  1. Preheat oven to 375 degrees.
  2. Grease bottom of baking pan (I used several small baking dishes).
  3. Place peaches in the bottom of baking pan (s).
  4. Mix flour, raw sugar, baking powder, almond milk, vanilla, 1 tablespoon of cinnamon and ⅛ cup brown sugar in a medium sized bowl.
  5. Pour mixture over peaches.
  6. Top with Earth Balance.
  7. Bake for about 25 minutes.
  8. Sprinkle the remaining cinnamon and brown sugar on top of cobbler.
  9. Bake for another 5 – 10 minutes until peaches are tender.
  10. Serve warm topped with your favorite non-dairy ice cream.

  1. It’s hard to argue with peach cobbler. We’ve been getting peaches at the farmer’s market every week, aren’t they great? We’ve mainly been eating ours fresh or grilling them. You must love cinnamon, your recipe is generous with it.

    • Yeah, fresh peaches are the best, soo juicy and sweet. We do love our cinnamon, I tend to add lots of cinnamon to most of the desserts I make, my daughter and I love the stuff!
