Vegan Taco Salad

Vegan Taco SaladMexican food is my favorite food so obviously, taco salad is my favorite salad – there are several variations on the site but, I think this is my favorite. Filling and full of flavor, this is definitely one to try!

Vegan Taco Salad – this one’s a keeper, you won’t miss the dairy, bursting with spicy flavor this is my favorite salad.
Ingredients
Salad
  • 1 c raw quinoa, cooked and cooled
  • ½ jalapeno, minced
  • ¼ c diced red onion
  • ¼ c diced green onion
  • 2 celery stalks, diced
  • ½ c black olives, chopped
  • 1 can kidney beans, drained and rinsed
  • 2 ears roasted corn
  • few handfuls baby spinach
  • 2 tomatoes, chopped
  • 2 avocados, chopped
  • ¼ c cilantro, minced
  • ⅔ c raw sunflower seeds, toasted
  • crushed corn chips
Dressing
  • ½ block tofu, drained and patted dry (I used extra firm)
  • 3 t cayenne
  • 4 t cumin
  • 2 t garlic powder
  • ½ jalapeno, minced
  • 2 T red onion, chipped
  • 3 T Veganaise
  • 3-4 T vegetable broth
  • 1 lime, juiced
  • ¼ c cilantro, minced
  • salt & pepper
  • Cholulu

Instructions
  1. For salad; layer salad in big bowl, begin with quinoa and end with chips, layer the rest how you like. For dressing; put tofu through cilantro in high-powered blender and process until smooth.
  2. Add salt and pepper and Cholulu (we like spicy, so I add quite a bit but, add to your taste preference).
  3. Taste and adjust seasoning if necessary.
