Cilantro Jalapeno Hummus
  • 1 15 oz can of chickpeas, drained (save liquid!)
  • 3 cloves garlic, peeled
  • 2-3 hot sauce (I used Cholulu)
  • 1 jalapeno, (with or without seeds, be careful, the seeds make it HOT!)
  • ½ lime, juiced
  • 1 t cumin
  • 2 T tahini
  • 2 T olive oil
  • salt & pepper
  • a little reserved chick pea liquid
Tahini Sauce
  • 4 T tahini
  • ½ lime, juiced
  • 1 clove garlic, peeled
  • 1 t cumin
  • 1 t agave
  • 2 T Srirarcha (you could use Cholulu)
  • 3 T Veganaise
  • 3 T fresh parsley
  • 3-4 T reserved chickpea liquid (if you aren’t making the hummus, you could use a little soy milk or vegetable broth)

Instructions
  1. For Falafel, combine all ingredients except for oat flour in food processor and process until combined and no large chunks of chickpeas are left.
  2. Transfer mixture to a bowl, add a little oat flour and stir into chickpea mixture.
  3. Taste and add more seasoning, if neccessary.
  4. You want to be able to form the mixture into patties.
  5. It is okay if it is a little sticky, but they need to hold their shape.
  6. If they need more oat flour, add it.
  7. Put formed patties on a cookie sheet sprayed with cooking spray.
  8. Spray a little cooking spray on top of patties.
  9. Bake at 400 degrees for about 15 minutes.
  10. Flip patties over and bake for another 7 minutes until both sides are browned.
  11. Be careful not to overcook or they will dry out.
  12. For Hummus, combine all ingredients in food processor and process until smooth.
  13. For Tahinia Sauce, combine all ingredients in food processor and process until smooth.
  14. Serve Falafel in pita or flatbread with Hummus, Tahini Sauce, and your desired veggies.
