Healthy Southwest Quinoa Salad

Lightened up healthy, southwestern inspired salad – loaded with flavor and protein!
Ingredients
Salad
- 1 c uncooked quinoa (cook in 2 c vegetable broth with zest of 1 lime)
- ¼ c red onion, minced
- 1 red pepper, minced
- 1 can kidney beans, drained and rinsed
- ¼ c sliced black olives
- few large handfuls of fresh baby spinach (or your favorite green)
- 4 corn tortillas (brushed with olive oil and sprinkled with salt and cumin, cut in triangles
- and baked at 350 for about 15 minutes until crisp)
Pico De Gallo
- 4 tomatoes, chopped
- 4 T red onion, minced
- 1 garlic clove, peeled and minced
- ½ jalapeno, minced (with or without seeds)
- ½ lime, juiced
- few tablespoons of fresh cilantro
- 1 t crushed red pepper
- salt & pepper
- few drops of Cholulu (or your favorite hot sauce)
Avocado Dressing
- 1 large avocado
- 1 small tomato, chopped
- ½ jalapeno, minced (with or without seeds)
- ½ lime, juiced
- 1 garlic clove, peeled and minced
- 2 T red onion, chopped
- 1 t crushed red pepper
- salt & pepper
- few drops of Cholulu (or your favorite hot sauce)
- few tablespoons of fresh cilantro
Instructions
- For salad, combine all ingredients (except tortillas) in a large bowl.
- For Pico De Gallo, combine all ingredients in a small bowl and set aside.
- For Avocado Dressing, process all ingredients in a food processor and blend until smooth.
- To serve, put some salad in serving bowls, top with pico, dressing,
- and some baked tortilla chips.
