White Bean Shiitake Bisque

Calista is really into soups lately. Also, she is loving shiitake mushrooms. She vacillate’s between loving and hating mushrooms. Her current favorite is shiitake’s. Of course, she couldn’t be in love with the cheaper crimini’s! Anyhoo, she likes the nutty flavor of the shiitake’s. You could certainly substitute a different mushroom. This is a really filling soup and the pureed beans give a creamy bisque texture with no soy creamer or soaked nuts so it is soy and nut free for those watching out for these allergens.

Vegan Chilaquiles – this was a winner, loaded with spicy flavor, fresh roasted vegetables, no soy, no faux meat or cheese, just craveable Mexican food with a kick!

This was my first vegan swap, and I received my vegan goodies from Amie at www.wholesoulvegan.blogspot.com. She did a great job sending me stuff I have never tried (except the cashew cookie LaraBar, but, this is my very favorite LaraBar, so win win!!)
Look at the awesome goodies;

Teriyaki Primal Stick – consumed immediately by my husband, who said it was good between mouthfuls. It was not really a smoky teriyaki but more a sweeter maple taste,

Mori Nu chocolate pudding mix, mixes with silken tofu for yeah, vegan pudding! I have yet to make vegan pudding so I am excited about to try this.

Pistachios, yum! I love all kinds of nuts, but, I don’t buy pistachios or hazelnuts enough, so, yeah!

Orange Extract, I am thinking vegan thumbprints with orange extract, maybe filled with raspberry jam

LaraBars – apple pie and cashew cookie (cashew cookie is my fave, I think it is very rich)

Vegan Sprinkelz – awesome, I have never seen vegan sprinkles – can’t wait to sprinkle these on cupcakes or sorbet!

Just thought this was interesting. At first I thought it was made up. But then I realized that there are many people who really don’t know what vegans are.
